A frenzy

The other night I had a baking frenzy.

It started with what I call Breakfast Cookies... because, hey. There's oatmeal in them.


Then I moved on to Scotcharoos... because I wanted them.


And then there was Fruit Pizza... which is also good for breakfast.


So really I just prepped some breakfast for the upcoming week.

Why the frenzy? To celebrate!

Our neighborhood just grew by 5 pounds 6 ounces.

Five pounds of straight up handsomeness... and the rest mostly sleepiness. Little stinker has not opened his eyes for me once yet! But he is dang cuddly. It's so fun to have a baby I can snuggle. The patients at work hog their babies. Big time. Rude.


And of course I shared some with this little miss too.


Just look at her. She needs a cookie.

Breakfast Cookies (aka Monster Cookies)
3 eggs
1/2 cup sugar
3/4 cup brown sugar
3/4 teaspoon vanilla
3/4 teaspoon corn syrup
1/2 cup butter, room temperature
1 and 1/4 cup peanut butter
2 teaspoons baking soda
4 and 1/2 cups oatmeal
6 ounces chocolate chips
6 ounces M&M's
Combine all in order of ingredients. Depending on the dough sometimes I add a splash of water if it's too dry, and sometimes a splash of flour if it's too sticky. Drop by spoonful onto cookie sheet. Bake 350 degrees for 11 minutes. Makes 3 - 4 dozen.

Fruit Pizza
8 ounces cream cheese, softened
1/2 cup margarine
1 and 1/4 cup flour
1/4 teaspoon salt
1/3 cup sugar
1 cup cool whip (half of a container)
Fruit! strawberry, kiwi, blackberry, blueberry, grapes
Combine 4 ounces of cream cheese and margarine, mixing until blended. Add flour and salt. Mix well. Form into a ball, wrap in plastic wrap and chill 20 minutes or more.
On floured surface roll to 14 inch circle and place on pizza pan. Good luck with that. Dough and I don't get along very well, so I just get it flattened out somehow then put it on my pizza stone.
Prick bottom of dough with fork. Bake 425 degrees for 12-15 minutes. Cool.
Whip remaining cream cheese and sugar. Fold in cool whip. Spread on crust. Top with fruit. Chill.

If I wasn't so exhausted from another crazy day in babyland I would totally whip up some of those breakfast cookies. Right. Now.

But I'm too exhausted from another crazy day in babyland. Seriously. Can it please slow down now? I'm sick of working while at work.

Oh Danica. Again you make me smile..."breakfast cookies". God love ya. Monster cookies are a specialty of mine as well, and I have been known to eat them any time of day, but to categorize them as a breakfast food hadn't occurred to me - 'til now. Still making me smile just thinking about it. THIS is the kind of sunny-side-up approach to life and wonderful sense of humor that makes me adore you, even though I never see you.
I can't believe you did all that in one night. Honestly - where do you get the energy?? (Ahh, I bet from the hearty sustenance of oatmeal from the first endeavor of the evening). :)
